Chopped Salad…

Here’s a tasty new Chopped Salad recipe with a very tangy lime vinaigrette dressing…On the real, we had our very young film editor over while I was chopping this salad together and he said he doesn’t eat vegetables ever…“are you serious?” Guess what, I made him eat this absolutely delicious Chopped Salad and he loved it! Yep, don’t mess with me making vegetables taste good! This salad is basically a collection of random ingredients, inspired by my new favorite cookbook Balaboosta by Einat Admony that my amazing photographer Michael Brian gave to me as a gift. Shh, I love a new cookbook for any occasion… People always say they don’t know what to get me? I love adding to my cookbook collection, because I really use them! In this fresh recipe, the lime vinaigrette with black beans, corn kernels, jalapeño, spinach, bell pepper, cilantro, basil and avocado taste like heaven on earth. Who doesn’t want to taste heaven…

Chopped Salad…

Inspired by Balaboosta by Einat Admony


  1. Lime Vinaigrette

  2. 3 tablespoons olive oil

  3. 1 tablespoon fresh lime juice

  4. ¼ teaspoon kosher salt

  5. Pinch of freshly ground black pepper

  6. Pinch of sugar

  7. Salad

  8. 5 or 6 fistfuls baby spinach (sliced into thin strips (julienned, if you’re fancy))

  9. 1 cup drained canned corn kernels

  10. 1 cup drained and rinsed canned black beans

  11. 1 small red bell pepper (cored, seeded, and cut into small cubes (about 1 cup))

  12. 1 ⁄3 cup store-bought crispy shallots or fried onions

  13. 1 small avocado (cut into small cubes)

  14. 1 jalapeño chile (cored, seeded, and cut into small cubes)

  15. 3 tablespoons finely chopped fresh cilantro or basil


  1. Slowly whisk the olive oil into the lime juice. Then add the salt, pepper, and sugar. Toss all the salad ingredients together with the lime vinaigrette. It doesn’t get any easier than this!
