We love tacos here in my house! So in keeping with the New Healthy, here’s a quick, simple and healthier version of Chicken Tacos. This recipe is lighter with lots of sautéed vegetables and organic chicken breast or you can use the chicken from a roasted chicken. I’m usually able to get 2 or 3 meals out of one roasted chicken, so it’s nice to have a little variety beyond just chicken salad. You can use store bought taco seasoning, but I made my own last time and still had some on hand. I used my stove top grill to combine leftover organic chicken breast with cut up red and yellow bell peppers, thinly sliced sweet Maui onions and taco seasoning. Once you have the basic ingredients ready — it’s up to you to add whatever condiments you have on hand. Yummy in your tummy! So good and so fast! We all need a quickie every now and then! LOL!

Easy Chicken Tacos
Approximately 2-3 cups cooked (shredded chicken)
Taco seasoning (see recipe below or store bought)
1 bell pepper (thinly sliced)
1 Maui white onion (thinly sliced)
1 Tbsp olive oil
Desired toppings (lettuce, cheese, beans, rice, salsa, hot sauce, jalapeños)
1 Tbsp chili powder
1/4 tsp garlic powder
1/4 tsp onion powder
1/4 tsp crushed red pepper
1/4 tsp oregano
1/2 tsp paprika
1 1/2 tsp cumin
1/4 tsp salt
1/2 tsp pepper
Combine all ingredients in a small bowl.
Heat a grill or skillet over medium heat. Add olive oil, bell peppers, sliced onions and chicken and taco seasoning. Cook, stirring occasionally, until heated through. The amount of seasoning will depend on your taste preferences. (I ended up adding the whole batch of seasoning, but you can start with less and add more after tasting.)
Remove from heat; keep warm. Lightly fry or heat tortillas to your desire of doneness.
Combine with desired toppings.
