Here’s a simple, classic Chicken Salad recipe that I always go to when I have a little chicken left over. This Chicken Salad is tangy, spicy and most importantly, fulfilling. It is great to turn into sandwiches for the kids or since I am desperately trying to reduce carbs from my diet, I eat it served on top of a bed of lettuce and it is just as delicious and satisfying!
Woo…It was an action packed weekend starting with Valentine’s Day. My husband Tyson and I didn’t have plans but boy it turned into a fun filled day! We started off with lunch at Mozza Pizza, where we saw the owner Nancy Silverman checking in on her very famous delicious restaurant. And of course we had to enjoy a great mid-day bottle of vino!
Next we headed to downtown LA to pick up materials for our various projects we are working on and met up with our designer, Teddy Lawson, of Style Design LA. Naturally, work turned into play time as he took us to the trendy new Ace Hotel for rooftop cocktails. Yes, more cocktails! The view was amazing! I have to say, downtown LA is on the come up for sure and I hope to visit some more new hot spots in the area.

Of course we didn’t stop there; Tyson and I were hungry all over again and stopped into our local Encino steakhouse, Larsen’s, for a quick meal and another glass of vino. Gotta say this was one of our best Valentine’s Day ever! Just the two of us, hanging and having fun! Sometimes you gotta take the time to hang, go with the flow and be spontaneous!
The rest of the weekend was dedicated to the kids with movies, skate boarding, lunch and hiking at the Lake Hollywood Reservoir, a special spot for us. This is where Tyson asked me to marry him after a perfect, beautiful hike! How the years have flown by and now we get to walk at the reservoir with our two amazing kids. If we take the time to reflect on our life’s journey it is truly an insightful and beautiful experience.

Ali in the Valley
2 cups cooked skinless chicken breast (cubed)
1 stalk of celery (sliced)
1 medium unpeeled apple (diced)
1/4 cup raisins
1 tbsp lemon juice
1/4 cup low fat yogurt
1/4 cup fat-free mayonnaise
1 tsp curry powder
Place chicken cubes in a medium bowl along with sliced celery, diced apple and raisins. In a small bowl, whisk lemon juice, yogurt, mayonnaise and curry powder. Pour over chicken and toss to coat.
