Chicken Burrito Bowl for Super Bowl Sunday…


On the menu for Super Bowl Sunday this weekend…my interpretation of Chipotle’s Chicken Burrito Bowl.  I can’t think of a better meal to feed my hungry crew than a big, over-stuffed burrito bowl with all the yummy toppings. Chipotle is one of my family’s favorite fast food restaurants, and you know me, I like to take my favorite restaurant recipe and give it some improvements. Here’s my version of the Chicken Burrito Bowl served in an edible flour bowl with cilantro-lime rice, black beans, grilled lime marinated chicken (or any other meat you like), guacamole, salsa, jalapeños and cheese. Yes, baby it’s so good, I’m super excited to eat one myself! I found these edible flour tortilla bowls at Target.  Obviously,  I’m cheating on my food regime for Super Bowl Sunday, but if you wanna be good just eliminate the flour bowl and have it as a salad! Tell me again who’s in the Super Bowl? LOL!

Chicken Burrito Bowl for Super Bowl

Chipotle Style Chicken Burrito Bowl

Ingredients

  1. 2 cups shredded chicken about 2 medium chicken breasts, approx. 1 lb.

  2. 3 cups brown rice cooked

  3. 1 lime juiced

  4. 1/3 cup fresh cilantro chopped, plus more for garnish

  5. 1 15- ounce can black beans drained and rinsed

  6. 2 avocados lightly mashed

  7. 3/4 cup salsa store bought or homemade

  8. 1/2 cup plain Greek yogurt

  9. Other optional toppings:

  10. Fresh corn

  11. Chopped tomatoes

  12. Cheddar cheese

  13. Sliced jalapeños

Instructions

First, prepare your chicken: Leftover chicken (whether a whole roasted chicken or individual chicken breasts, legs, or thighs) works great for this dish (and cuts down on prep time). If you're working with fresh chicken, I recommend using two medium-sized chicken breasts.

Preheat the oven to 375 degrees. Season the meat with a pinch of salt and fresh ground pepper, and cook for 20-30 minutes, flipping each breast halfway through. Remove the chicken from the oven, and use two forks to shred the meat. Set aside.

Stir lime juice and fresh cilantro into the cooked rice. (Leftover rice works great for this, too!)

To prepare the burrito bowl, divide the rice between four shallow bowls and top with black beans. Next, pile high with shredded chicken. Add a layer of mashed avocado. Top with salsa and Greek yogurt. Garnish with chopped cilantro and any additional toppings you choose.
