Baked Parmesan Swai:
Staying on course with healthy food is a choice! It’s not always an easy choice but I try to present delicious options and variety to help us stay on track. Some new friends of ours came by the other day and brought as a gift some Swai fish filets. Pronounced “sw-eye” this fish is a whitefish similar to catfish but is milder in flavor and more delicate in texture. Being a dover sole or catfish girl, I was pleasantly surprised at how lovely and light the Swai fish turned out. The whole family ate it up lickity quick and now I need to go out and buy some more! Would love to know your opinions or favorite recipes on Swai fish!

Recipe for Baked Parmesan Swai:
12 oz Swai Filet
2 tablespoon oil
1 teaspoon fresh Thyme
1 teaspoon Rosemary
approx. an oz of Lemon Juice
2 tablespoons grated Parmesan Cheese
Preheat oven to 350 degrees. Pour olive oil into the bottom of a glass baking dish and dust rosemary and thyme into the oil. Assuming your fish is thawed, lay in baking dish and then flip over. Sprinkle lemon juice over the fish then dust Parmesan cheese over the fish. Bake for 15 minutes. The fish will be done when opaque and flakes easily with a fork.
