Ingredients

  • For the pasta:
  • 8 oz pasta (spaghetti or linguine)

  • For the sardine mixture:
  • 1 can (4 oz) sardines in olive oil

  • 1 tbsp olive oil

  • 2 cloves garlic, minced

  • Zest and juice of 1 lemon

  • ¼ tsp red pepper flakes (optional)

  • For seasoning & garnish:
  • Salt & black pepper to taste

  • Fresh parsley, chopped

  • Grated parmesan (optional)

Directions

  • Bring a large pot of salted water to a boil and cook pasta until al dente. Reserve about ½ cup of pasta water, then drain.
  • In a skillet, heat olive oil over medium heat. Add garlic and sauté until fragrant, about 1–2 minutes.
  • Add sardines, gently breaking them apart. Cook for another 2–3 minutes until warmed through.
  • Stir in lemon zest, lemon juice, and red pepper flakes. Mix well.
  • Add the cooked pasta to the skillet, tossing everything together. Use a bit of reserved pasta water if needed to loosen the sauce.
  • Season with salt and pepper to taste.
  • Finish with fresh parsley and grated parmesan, if desired.

  • 1 lb white fish fillets (cod, halibut, or tilapia)

  • 1 tbsp olive oil

  • 1 small onion, diced

  • 2 garlic cloves, minced

  • 1 tbsp fresh ginger, minced

  • 1 tbsp red curry paste

  • 1 can (14 oz) coconut milk

  • 2 cups chicken or vegetable broth

  • 1 tbsp fish sauce

  • Optional: splash of clam juice (for extra depth)
  • Juice of 1 lime

  • Salt and pepper, to taste

  • Fresh cilantro (for garnish)

  • Lime wedges (for serving)

Directions

  • Build the base
    In a large pot, heat olive oil over medium heat.
    Add the diced onion and sauté for about 3–4 minutes until softened.
    Add garlic and ginger, and cook for another minute until fragrant.
  • Add flavor
    Stir in the red curry paste and let it cook for about a minute.
    (It has a little kick—so adjust to your taste.)
  • Add liquids
    Pour in the coconut milk and broth, stirring to combine.
    Bring everything to a gentle simmer.
  • Add the fish
    Gently place your fish into the pot.
    Let it simmer for about 8–10 minutes, or until the fish is cooked through and flakes easily.
  • Finish the soup
    Stir in fish sauce, lime juice, and (optional) a splash of clam juice for extra depth.
    Taste and adjust seasoning with salt and pepper as needed.
  • Serve
    Ladle into bowls and top with fresh cilantro and lime wedges.

So of course, I went into the kitchen with one goal: make it just as rich and satisfying – but a little cleaner, a little lighter, and honestly… even better.

Roasting the mushrooms, onion, and garlic is the game changer here. It brings out that deep, savory flavor that makes this soup taste like it’s been simmering all day, even though it’s surprisingly simple to pull together. The garlic gets soft and caramelized, the mushrooms turn perfectly meaty, and everything blends into the smoothest, creamiest texture.

I like to finish it with just a touch of cream and butter for richness, plus a splash of Worcestershire for that subtle umami boost. It’s cozy, it’s nourishing, and it’s one of those recipes that feels a little fancy without any extra effort.

Ingredients


  • 1 pound cremini mushrooms halved

  • 1 medium onion peeled and quartered

  • 1 whole head of garlic sliced in half lengthwise

  • 2 tablespoons olive oil

  • 2 teaspoons fresh thyme leaves

  • 1 teaspoon kosher salt

  • ½ teaspoon black pepper

  • 3 cups vegetable broth

  • ½ cup heavy cream

  • 2 tablespoons unsalted butter

  • 1 teaspoon Worcestershire sauce

  • Optional garnishes: ground black pepper a drizzle of cream, and a sprinkle of fresh thyme.

Directions


  • Preheat the oven to 400°F.
  • Place the mushrooms and onion on a sheet pan. Drizzle the oil over the top of th veggies, and then sprinkle the thyme, salt, and pepper over the top. Toss to coat them and then place the garlic cut side down on the pan.
  • Roast the vegetables for 40 minutes or until the mushrooms and onions are tender, stirring halfway through the cooking time.
  • Set aside a few roasted mushrooms for garnish. Then, transfer the remaining mushrooms and onions to a blender or food processor. Squeeze the roasted garlic out of the skins into the blender- be careful, it will be hot.
  • Add the vegetable broth and blend until the soup is completely smooth. Transfer the soup to a large pot and place it over medium heat on the stove. Bring the soup to a simmer.
  • Once the soup is simmering, add the cream, butter, and Worcestershire sauce.
  • Ladle the soup into bowls and garnish with the reserved roasted mushrooms.
    Add a drizzle of cream, black pepper, and a few thyme leaves, if using.

    1 ripe avocado

  • Toppings:
    1 tbsp everything bagel seasoning
    1 tsp extra-virgin olive oil

    2 large eggs (fried, poached, or soft-boiled)
    2 tbsp crumbled feta cheese
    Fresh herbs (chives, parsley, or cilantro), chopped

Directions

  • Toast the bread to your preferred crispness.
  • Halve the avocado, remove the pit, and scoop into a bowl. Mash with a fork until mostly smooth. Stir in lemon juice, olive oil, and a pinch of salt.

  • Sprinkle generously with everything bagel seasoning.

If you’re hosting a smaller Christmas dinner or just want something special without cooking a full turkey, these Christmas Cornish Game Hens are the perfect solution. They’re cozy, festive, and surprisingly easy to make — but still feel like a showstopper on the table.

This recipe is designed for two hens, making it ideal for an intimate holiday meal, date-night Christmas dinner, or when you want something elevated without a ton of leftovers.

Ingredients

  • 2 Cornish game hens
  • 2 tablespoons olive oil or melted butter
  • 2 teaspoons kosher salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 lemon, halved
  • 2–3 cloves garlic, smashed
  • Fresh herbs (thyme, rosemary, or sage), optional
  • Optional aromatics for the pan: onion wedges, carrots, or potatoes

Directions

1⃣ Preheat & Prep

Preheat your oven to 425°F. Pat the Cornish hens completely dry with paper towels — this helps the skin get nice and crispy.

2⃣ Season the Hens

Place the hens on a baking sheet or in a roasting pan. Rub each hen all over with olive oil or melted butter.

Season generously as desired or with my Ali in the Valley Essence seasoning

3⃣ Stuff with Flavor

Stuff each hen with:

  • Half a lemon
  • A couple smashed garlic cloves
  • Fresh herbs, if using

This adds so much flavor while they roast.

4⃣ Roast

Place the hens breast-side up in the oven. Roast uncovered for 55–65 minutes, or until:

  • The skin is golden and crispy
  • Internal temperature reaches 165°F in the thickest part of the thigh

If the skin is browning too quickly, loosely tent with foil for the last 10–15 minutes.

5⃣ Rest & Serve

Remove from the oven and let the hens rest for 10 minutes before serving. This keeps them juicy.

Serve whole or cut in half, alongside your favorite holiday sides.

Ingredients

  • 4 cod fillets (about 6 oz each)
  • 2 Tbsp olive oil
  • 2 cloves garlic, minced
  • 1 pint cherry tomatoes, halved
  • 1/2 cup Kalamata olives, pitted and halved
  • 1/4 cup red onion, thinly sliced
  • 2 Tbsp capers, drained
  • 1 lemon (zested and juiced)
  • 1/4 cup fresh parsley, chopped
  • Salt & freshly ground black pepper, to taste

Directions

  1. Preheat oven to 400°F.
  2. Pat cod fillets dry, season both sides with salt and pepper, and place them in a lightly oiled baking dish.

Ingredients

For the Pickled Peaches:
– 1 cup balsamic vinegar
– 1 cup white vinegar
– 1 cup water
– 2 tbsp honey
– 2 tsp kosher salt
– Fresh peaches, sliced

For the Skewers:
– 8 oz mozzarella pearls
– 4 oz prosciutto slices
– 12 basil leaves
– 12 cocktail skewers
– Salt & pepper to taste

Directions

  1. Pickling the Peaches:
    In a medium saucepan, combine balsamic vinegar, white vinegar, honey, and kosher salt. Heat over medium stirring until salt and honey dissolve. Add water and stir. Pour this mixture over peach slices—ensuring they’re fully submerged—and let them sit for about 30 minutes.
  2. Assemble the Skewers:
    Remove peaches from the pickling liquid. Wrap each slice in prosciutto, then thread onto skewers in order: prosciutto-wrapped peach → mozzarella pearl → basil leaf. Repeat. Season with salt and pepper if desired.
  3. Serve:
